Hiatus
I'm heading a little farther down the road to live in Austin, so this blog is on hold until I have a new kitchen to call home. I've been ejected from my cozy cubicle due to "these economic times", so I'm taking the opportunity to try something new. If anyone would like to pay me to dice veggies or sift flour, let me know.

Chocolate Glazed Donuts
I've been slippin'. After an intense debate on yeast-risen vs. cake donuts, I remembered I hadn't posted these babies yet. It's basically my beignet recipe with negative space. Scroll down on that link for the variation.

Pralines
Sugar ruuush!
- Pralines:
- 1 1/2 c pecans
- 2 c sugar
- 1/2 c water
- 2 tB brown rice syrup
- 2 tB soymilk powder
- 1 tB blackstrap molasses
- 1/2 ts vanilla extract
- 1/2 ts bourbon
- 1/4 ts salt
Toast pecans in the oven at 400°F for 7 min, but be careful not to burn.
Chop coursely, set aside.
Combine everything else in a 2 qt sauce pot.
On med-low heat, slowly bring mixture to 235°F (soft-ball stage).
Use a candy thermometer!
Whisk constantly.
Immediately remove from heat.
Fold in pecans.
Stir until it cools slightly & just begins to thicken.
Scoop tBs onto parchment paper quickly before it sets.
Wait about 30 minutes.
Eat.
